WebI think it would be better to build a base that supports the join rather that use pocket screws or dowels. You could make a frame the has crossbeams running under the MDF and then fix the MDF down to the frame. A completely different approach to get a 78" square piece, would be to use 1/4" plywood cut to 78", either 4 or 6 pieces and alternate the seams at 90 degrees.
